There is something about the spectacular depth and vibrance there is to the taste of ripe mango that movie scriptwriters seem to love. If you are a fan of that wry representation of American humor called Seinfeld, you might remember an episode in which Kramer, on some kind of a fruit trip, hands a plate of mango around; George loves the fruit so much, he believes it has special powers in the bedroom. To anyone who loves the magic of a great mango, that doesn’t seem like an inappropriate way in which to describe the experience. If you happen to love mangoes, they are always in season from New Year’s Day to the end of summer; usually, you get the best varieties between spring and the start of summer. For the best mango nutrition and taste, you need to pick fruit that’s just ripe enough. When you squeeze the fruit gently, it needs to give a little bit. If you can’t find mangoes that are properly ripe, you could buy them and leave them somewhere warm in your home anyway. They’ll ripen on their own.
While eating mangoes by themselves can be a wonderful experience, there all kinds of special exotic recipes that you could use the fruit in; there are all kinds of ways in which you can give your body the benefits of mango nutrition – which by the way, includes antioxidants, potassium, all kinds of vitamins and copper.
Let’s start with a great smoothie. Mangoes, to look at them, look like really pulpy fruits that would be reduced to nothing if you ran them through the blender. In reality, mangoes, which happen to be such a rich source of fiber, can be truly substantial. A mango the size of an average-sized fist would be enough for four glasses of smoothies.
Let’s start with a delicious smoothie made of mangoes, oranges and a spicy touch of ginger (which happens to go admirably with mango). Start out with a quarter of an average-sized mango, a cup of orange juice, a teaspoon of ginger juice (to make ginger juice, take a piece of ginger, beat it savagely and squeeze out the juice), a couple of ice cubes, and optionally, half a banana. All you need to do is to throw everything into the blender and blend away. If the mango happens to be a little acid, lots sugar will help.
Up next, a rice pudding topped with mango should be great as dessert. This happens to be a far Eastern sweet and you’ll need red rice from Bhutan (a tiny Himalayan kingdom) for the pudding. Grab three-quarters of a cup of rice, mix it in with one-and-a-half cups of water and a pinch of salt and boil in a saucepan. Boil until it cooks well and then add in a cup of milk, a cup of coconut milk and a teaspoon of vanilla extract. Make sure that you simmer the whole mixture for about 15 min. as you stir so that everything becomes nice and creamy. A teaspoon of rosewater should be a great way to add some flavor.
You can chill the pudding now, and serve it in little glass bowls garnished with mango. The more ways you find to work the king of fruit into your diet, the better the mango nutrition that you get.
